Pinot Gris »Der sagenhafte Wolf«, 750 ml

Description

The vinification: This wine is produced from hand-picked Pinot Gris grapes and comes from the steep slopes of the Wachau Valley in Austria. The unique climate in this part of the Wachau, together with the large temperature fluctuations between day and night, which reach up to 25 °C in autumn, favour the development of the grapes’ special aroma. After the selective harvest of the fully ripe grapes, the mash is fermented in stainless steel tanks. The full-grape processing and spontaneous fermentation using natural yeast ensure slow maturation and complete naturalness. The least possible mechanisation ensures gentle pressing of the grapes. Long contact with the yeast is essential for the production of storable wines.

The wine: In the glass, the Pinot Gris presents an elegant yellow-green colour. The palate has a dense and complex structure and impresses with a close and creamy texture. Aged in a well-bound small wooden barrel, very fine-pored, Burgundian juiciness, wonderful melting texture and very delicate residual sweetness, smooth minerality paired with hearty acidity, multi-layered depth with enormous length. A Pinot Gris with character and identity – fabulous and mysterious like a wolf.

The food: Due to its density, this Pinot Gris (»The Fabulous Wolf«) harmonises perfectly with lamb and game dishes with strong sauces. It also pairs very well with a fillet of beef with porcini mushrooms or quail on mushroom risotto. We recommend drinking the wine at a temperature of between 8-10 °C.

Sighardt Donabaum

»Full of wanderlust, but a homebird at heart, forester and winemaker Sighardt Donabaum developed his hunting instinct for high quality wines at an early age."

The winery is located in the municipality of Spitz an der Donau in the world-famous Austrian wine-growing region of Wachau, about 80 kilometres west of Vienna. It was first mentioned in documents in the 12th century and has been in the family since 1833. Growing up in his parents' vineyard, Sighardt Donabaum has been familiar with the cultivation and production of fine wines since childhood. Despite his attachment to the region and his parents' business, he simultaneously felt a longing for the faraway. He thus decided to live a life as a forester and hunter, completely in harmony with nature, far away from his home, in North America. Training as a forester brought him a little closer to his goal of living in the vastness of Canada. But despite his wanderlust, his passion for wine always remained. His experience as a winemaker, forester and independent mind guarantees unique wines and allows Sighardt Donabaum to break with tradition again and again – in pursuit of genuine, unmistakable quality. The grape sets the ideal of taste. To come as close as possible to this principle, all wines are processed naturally and left untreated. Apart from care, experience and a passion for the highest quality, nothing is added.
